Winemaking

Pagos del ReyToday, the Pagos del Rey winery in DOC Rioja makes young wines – white, red and rosé – and crianzas, with the red varieties comprising over 90 percent of the total production.

In order to guarantee the success of production, in addition to spacing out harvests and selecting the best raw materials in accordance with the origin and variety of the grape, the Fuenmayor winery boasts striking and modern facilities fitted out with state-of-the-art technologies for growing, stabilising and conserving wines.

With regards whites, only the best Viura grapes are selected, which are subsequently passed to a draining tank, left to macerate with their skins and then subjected to alcoholic fermentation at a temperature ranging between 14 and 18º C for over two weeks to extract the best aromas. The wine then undergoes malolactic fermentation before carrying out the various processes needed prior to bottling.

With regards reds, the grape delivered to the winery – 90% of which is Tempranillo and the rest Graciano and Mazuelo – is destemmed and crushed. After cold maceration to extract the colour and main fruity aromas from the skins, the must ferments together with the skins at a low temperature so as not to lose its aromatic qualities. Malolactic fermentation helps to refine tannins, making them sweeter and more agreeable to the palate.

Lastly, with regards rosés, the traditional draining method is used. The alcoholic fermentation of the Garnacha variety is performed at controlled temperatures ranging between 14 and 18º for fifteen to twenty days, the time needed to consume all the sugar and which results in a truly aromatic wine.

GENERALLY SPEAKING, OUR WINES PRESENT THE FOLLOWING COMMON CARACTERISTICS:

Pagos del ReyOur YOUNG WHITES: These are outstanding for their appealing greenish colour and aromatic intensity, being very fresh and fruity wines with citric and apple aromas and light notes of pastry and banana, representative of the climatic conditions of the region and of the Viura variety.  They are fresh in the mouth and sweet on the palate.

Our ROSÉS: These are characterised by their pale brick tones. In the nose, these are very fresh wines with pronounced aromas of strawberries and flowers such as roses. They are made using the red Garnacha grapes exclusively.  They are light in the mouth with marked fruit nuances and refreshing acidity and with a long and harmonious aftertaste.

Our YOUNG REDS: These wines, with their attractive red colour and violet tones, have a complex bouquet exploiting all the potential of the Tempranillo variety with regards red fruits and strawberry yogurt, although they also have a certain mineral, chocolate and liquorish nuance. In the mouth these wines are oily, rounded and balanced. The aftertaste is very fruity with chocolate notes.

Our RED CRIANZAS: These wines are outstanding in their attractive cherry red colour with violet tones. In the nose, they show marked aromas of vanilla and are reminiscent of well-integrated red fruits and peach. These wines are complex on the palate, with refined sweet tannins, and keep the perfect balance between fruit and wood.
