Pagos del ReyOnly red wines are made in Pagos del Rey DO Ribera del Duero, which comply with the terms set by the pertinent Regulating Council with regards ageing as set forth below, although our young wine and those called vino roble (oak wines) only spend three to four months in the barrel.

The crianza wines have to be aged for at least two years, of which at least one must be in oak barrels with the capacity for 225 litres. The reserva wines must be aged for at least 36 months, of which at least 12 months must be in oak barrels.

Lastly, the gran reserva wines, subject to rigorous controls by the Regulating Council of DO Ribera del Duero, must be kept for at least 24 months in oak barrels and then aged in bottles for at least 36 months.

GENERALLY SPEAKING, OUR WINES PRESENT THE FOLLOWING COMMON CHARACTERISTICS:

Pagos del ReyOur COSECHAS (YOUNG WINES): These wines are not kept in barrels and are placed on the market only a few months after harvest. They are made from carefully selected and healthy grapes. The grape is destemmed and pressed with partially open rollers. It is then left to macerate at cold temperatures for a few days to obtain accentuated primary aromas with strong fruity notes of blackberry, strawberry, etc. Fermentation is at automatically controlled temperatures ranging from 25 to 28 ºC and maceration lasts for six to eight days with automated pump over.

Later, malolactic fermentation gives the wine more oiliness, freshness and the microbiological stability to guarantee that there will be no problems when bottled. After decanting and the coupage, the wine is clarified by adding egg white and filtered leaving the wine ready for bottling. Before its launch to the market, the bottled wine is kept in our facilities and turned so that our technical department can monitor its development before placing it for sale.

Our ROBLES: These wines are obtained from grapes collected from various vineyards which allow the maceration process to be a little longer than for cosechas and for the wine to be aged in American oak barrels for three or four months. The end product is a big wine with aromas of ripe red fruit and spicy oak and an expressive mouthfeel.

Pagos del ReyOur CRIANZA: The grapes used for this type of wine are selected from low production vineyards with loose clusters of small grapes which have a very high concentration of polyphenol compounds. Fermentation is at temperatures ranging from 28 to 30 ºC. Maceration is long in order to extract and bind the best of each grape. The wine is then left for 14 months in oak barrels which have been approved by the winery.  The wood of said barrels is dried and toasted in accordance with our instructions thus distinguishing and personalising each of our wines. After the barrel, the wine is placed in a tank, clarified by adding egg white and bottled for eight to ten months before going on the market. The result is an intensely red wine, with the violet tones of a young wine. Fruity aromas blend with spicy, toasted and roasted nuances. This is a structured, fleshy and flavoursome wine with a long aftertaste.

Pagos del ReyOur RESERVAS and GRAN RESERVAS: The gran reserva and reserva which are to be placed on the market in 2007 are wines which have been made using the best grapes purchased by the winery from well-kept old vineyards.  The land of the vineyards chosen varies enormously (plateaus, ridges, stony and loamy land etc.), and production is low which results in complex and concentrated wines which have been aged in American and French oak barrels. These wines are periodically racked to oxygenise them and so that they can express all their potential with regards aromas and flavours. We are hoping to obtain wines with great personality and which are elegant, complex, full-bodied and well balanced.

Another unique wine which will soon be placed on the market is the spectacular Condado de Oriza 409.  The grapes used come from only two vineyards, one young and the other extremely old, it has aged in a French oak Taransaud barrel and is the most special wine commercialised by the Pagos del Rey winery in DO Ribera del Duero at the moment.
